Reply Julie says: November 2, 2012 at 7:09 pm Jalene- I made mine almost exactly the way you did yours and mine came out quite cakey as well, plus I had to bake it for about 30-35 minutes. Awesome! Reply Abigail says: October 10, 2012 at 2:29 am Just made these! They are fantastic! I used agave, and they did end up coming out a little more fluffy and cake-like, but it was still delicious
However, I try to make it up to them on weekends :) My mom introduced me to this incredible fall breakfast and OH MY GOSH! It is absolutely delicious! Last time a place failed me with my sought-for goods (it was Corner Bakery, and they have this signature chilled Swiss oatmeal that I LOVE), I kind of stood at the cashier with a stunned look on my face for about five minutes, and the girl working there looked like she was scared I was gonna cry. Did I do something wrong? Either way they are still so yummy! Reply Dorothy Kern replied on October 16th, 2014 at 12:14 pm Try and make sure that the cream cheese is only in the center of the muffin before baking
I loved how quick and easy these were to make too...just used a bowl and a whisk and they came together in a snap! I got 20 regular sized muffins out of the recipe and I baked them @ 325 for only 14 minutes (HOT oven). My DH had a horrible time of it too, as one would imagine, but we are stronger for it, and my son is big and strong despite the surgeries (ankle and heart) and stress. In a large bowl, whisk together the pumpkin, both sugars and the vegetable oil until completely combined, making sure to break up any chunks of brown sugar so no lumps remain
The only issue I had was the frozen log with the cream cheese; what a mess! I am not an experienced baker so maybe that is why that part was so messy but other than that, they were easy. With the mixer on low speed, add in the dry ingredients, mixing just until incorporated. To make the topping, combine the sugar, flour and cinnamon in a small bowl; whisk to blend

I had enough muffin batter for 24 regular size muffins -- I did not have enough cream cheese topping for all 24 -- but that was okay, the muffins were divine without it. The first time I made it, I beat it thoroughly smooth and ended up with soup! On the actual muffins, if you use white sugar, you get a lighter muffin, brown sugar makes a heavier muffin (go with what you like best)
